Aging & Processing (~ 3 weeks)

Your beef is dry-aged, then cut and packaged to your specifications by the butcher.

Pay Balance & Pick Up

Final balance is calculated by weight, and paid before pick up (in Princeton or Surrey).

Grass Fed

Grass-fed and finished. Our cows travel and graze the mountain rangelands right up until winter, producing a leaner, nutrient dense, and flavourful beef. Available for purchase in January, collection between February to March.

Grain Finished

Grass-fed, grain-finished. These cows are raised grazing on our pastures and rangelands, then grain finished when returning home. A more traditional finish, producing a highly marbled, tender, and flavourful beef. Available for purchase in June, collection between July and August.

FAQs

Grass-fed and finished cattle graze and forage only, producing leaner beef with a more complex flavour profile. It tends to be slightly higher in price per pound, as it takes longer to bring these cows to market weight.

Grass-fed, grain-finished cattle graze and forage initially, then are fed a diet of high-energy grains. A more traditional finish, it yields highly marbled, tender, and buttery beef.

Processing-including aging, cutting, and packaging-takes approximately 3 weeks.

The beef is hung and dry aged for approximately 21 days. This allows its natural enzymes to break down the tougher tissues, producing a more tender final product.

Our grass-fed beef will be ready for collection between February and March each year. Our grain-finished beef will be ready for pick up between July and August each year.

Whole Animal (400 to 500 lbs): Requires 16-20 cubic feet of space, and will fill an entire extra-large chest or upright freezer.

Half Animal (200 to 250 lbs): Requires 8-10 cubic feet of space, and will fill an entire medium-sized chest or upright freezer.

Mixed Quarter Animal (100 to 125 lbs): Requires 4-5 cubic feet of space, and will fill a compact chest freezer or the freezer of an extra-large refrigerator.

A deposit is paid at checkout to confirm your reservation. This amount will be applied to the final invoice.

Once your order has been weighed and processed, our team will be in contact to provide the invoice and to schedule collection. Payment of the remaining balance is required prior to collection.

All sales are final, no refunds or exchanges.

Pick up is available from your choice of two locations: Princeton, BC or Surrey, BC.

Once your order is fulfilled, someone from our team will contact you to arrange payment of the remaining balance and to coordinate collection from a designated location in Princeton or Surrey.

We do not offer delivery or shipping at this time.
